1 microwavable coffee mug, oiled
4 TBSP rice flour
3 TBSP sugar
2 TBSP baking cocoa
1 egg
3 TBSP rice, almond or soy milk
3 TBSP canola oil
Small splash of vanilla
-
Add dry ingredients to mug, mix well. Add the egg and mix again. Stir in milk, oil and vanilla and blend well. Place mug in microwave and bake for 3 minutes on high (1,000 watts) The cake will rise over the top of the mug, but don’t be alarmed. Allow to cool only slightly before tipping out onto a plate. Drizzle with a little warm Hot Fudge Sauce (see recipe below).
P.S. The cake is too much to eat in one sitting, so split it in half and refrigerate or freeze the second half for future enjoyment!

Hot Fudge Sauce:
½ cup brown sugar
2 TBSP baking cocoa
¼ cup rice or almond milk
½ TBSP oil
¼ tsp. vanilla
dash salt
-
Combine sugar and cocoa in heavy saucepan. Add milk. Heat to a rolling boil, stirring constantly for 1 minute. Reduce heat to low. Beat with spoon until smooth. Remove from heat. Stir in remaining ingredients. Makes ¾ cup of hot fudge sauce. Store in jar in the fridge and use as “needed.” :-)
