Make a bed of lettuce and/or fresh spinach in a shallow bowl. Top with crunched tortilla chips and a flavorful salsa. If you have chicken on hand, of course that is great too! It really is fine WITHOUT meat though, if you don't happen to have any cooked up and you're looking for a quick lunch.-
