No Wheat. No Dairy. No Problem.

So, why blog about this?

When our little girl had eczema quite badly, and after trying multitudes of creams, lotions and powders, we discovered that the problem was actually INTERNAL and therefore we had to fight it from the inside out. A doctor diagnosed the problem as wheat and dairy allergies. Since she was receiving all food from me, it was time for Mommy to cut out wheat and dairy! So began the search for tasty food ideas.... without the aid of so many ingredients that I was used to using on a weekly basis. My desire is that this blog will be a help to some who may also have some food restrictions.

Lemon Poppy Seed... pancakes???

My first attempt at wheat free/dairy free Lemon Poppy Seed Muffins turned out rather flat. They were delicious, but not fluffy. I think I know what went wrong, so we will be trying them again soon, hopefully with better results. Stay tuned for the lovely recipe... once I discover how to make it lovely. :-)
