Potato Salad
-
The warm weather is well on it’s way, and in some places it’s already here…. What could be more satisfying than a bowl of cool, creamy potato salad?

-
3 medium potatoes, peeled, cubed and cooked
½ cup real mayonnaise (be sure to check label for dairy content – Kraft real Mayo does not contain dairy)
1 tsp. prepared mustard
½ tsp. onion salt
½ tsp. garlic salt
¼ tsp. ground black pepper
garnish: dried chives and paprika
-
Whisk together mayonnaise, mustard and spices in a bowl. Stir in cooked potatoes. Chill in fridge for at least 2 hours. Garnish with chives and paprika. Resist temptation to eat the entire bowl in one sitting.
-
*You can add to this salad by mixing in celery and boiled eggs. I prefer mine plain, but some may think this version is boring. Adjust ingredients and measurements to your own liking.
