½ cup shortening
½ cup sugar
1 egg
1 ½ cups rice flour
1 tsp. cream of tartar
½ tsp baking soda
pinch salt

Cookie coating: ¼ cup sugar. 2 tsp. cinnamon

Beat shortening, sugar and egg. Add dry ingredients and mix well. Roll dough balls in cookie coating mixture. Bake @ 350 degrees for 8-10 minutes. Freeze extra cookies.
