-
You would very much like some incredibly Irresistible chocolate. But... you can't have wheat or dairy. You'll be delighted to find that these delicious chocolate treats contain neither one!

Brownie Cookies:
3/4 cup sugar
1/3 cup rice flour
1/4 cup + 1 TBSP baking cocoa
1/2 tsp. baking powder
1/2 tsp. salt
1/4 cup shortening
1 egg
1 tsp. vanilla
-
Icing:
1 cup powdered sugar
1 TBSP. water
1/2 tsp. almond extract
-
Preheat oven to 350 degrees. Combine dry ingredients in large bowl. Cut in shortening. Mix in egg and vanilla until all ingredients are moist. Spoon onto cookie sheet. Bake for 10 minutes. Do not overbake. Let sit on cookie sheet for a couple of minutes after taking them out of the oven. Remove from cookie sheet. Cookies should be almost "fudgy" in the middle, not hard.

For Sweetheart Brownie Cookies (shown above) use small heart cookie cutter to cut center out of half the cookies you baked. Spread icing on solid round cookie, top with cut cookies. Sprinkle with unsweetened baking cocoa, if desired. Take hearts that have been cut from cookies and sprinkle with powdered sugar.
